During the holy month of Sawan, many people prepare pure desi ghee at home for offering bhog (prasad) and cooking traditional dishes. Homemade ghee is aromatic, free from preservatives, and surprisingly easy to make. With a pressure cooker, you can prepare fresh desi ghee in less time while preserving its rich flavor.
Place the butter in a clean pressure cooker and heat it over a low to medium flame until it melts completely.
Leave the cooker without the pressure regulator (whistle) and continue cooking on low heat. Stir occasionally to prevent sticking.
As the butter cooks, it will begin to foam. Gradually, the foam will reduce, and the milk solids will settle at the bottom while the liquid turns a clear golden color.
Once the milk solids become light golden brown and you notice a rich, nutty aroma, switch off the heat. Be careful not to overcook, as this can burn the ghee.
Allow the ghee to cool slightly. Strain it through a fine sieve or muslin cloth into a clean, dry glass jar. Let it cool completely before sealing the container.
Homemade desi ghee adds a rich flavor and traditional touch to your Sawan bhog, making every festive dish more delicious and authentic.
