Mix vegetable curry is a delicious Bengali curry recipe made from a mixture of vegetables and spices. This side dish recipe is taste as well as healthy. Try this lunch/dinner recipe on special occasions like anniversary parties and gate-tuger and make them even more special!
2 tablespoons vegetable oil
1 bay leaf
3 tablespoons finely chopped ginger
2 teaspoons ground cumin seeds
3/4 cup chopped tomatoes
1/2 pound chopped potatoes
2 cup cauliflower
2 cups chopped brinjal/brinjal
1/4 cup boiled green beans
1 1/2 teaspoon sugar
1/4 teaspoon 5 spice powder
1/2 teaspoon ground turmeric
1 teaspoon salt
1/2 cup water
1 1/4 cup chopped, peeled sweet potato
1 cup chopped beans
3 tablespoons ground red chili
1/2 teaspoon garam masala powdercharan 1
Heat the oil and add sugar to it and fry for a few seconds. Then, reduce the heat and add bay leaf and five spices and cook for a few seconds.
Step 2
Now, add ginger, turmeric, cumin and salt. Keep stirring and add tomatoes, water, potatoes, sweet potato and cover and cook for 15 minutes. Then, add cauliflower, beans, brinjal and red chili paste.

Cook the heat and cook for 10 minutes, then reduce the heat. Now, open the lid and cook for more than 10 minutes.

If the vegetables start sticking, sprinkle hot water on them, but be careful because you should have a thick sauce that sticks to the vegetables.

Add peas and cook and cook until the vegetables cook well. Remove from the heat and add garam masala.
